The Reverse-Engineering of Honey
We Didn't Replace the Bee. We Recreated Its Process.
Our journey began by asking a simple question:
"What is the magic that happens inside a bee?"
We deconstructed the biochemical process that turns plant nectar into honey and rebuilt it from the ground up using the power of precision fermentation.
1. The Blueprint:
We identified the four key enzymes that bees use to transform nectar: alpha-amylase, alpha-glucosidase, glucose oxidase, and catalase. These natural biocatalysts are the engines of honey production.

2. The Bio-Factory:
We use a safe, well-characterized microorganism (E. coli) as a "bio-factory." Through genetic engineering, we provide this microorganism with the exact instructions to produce the key honey enzymes.

3. The Process:
In a controlled fermenter, similar to brewing beer, we combine our bio-factory with a plant-based "nectar" (a simple sugar recipe). The enzymes then get to work, mimicking the exact biochemical pathways that occur in a bee's honey stomach to create a final product that mirrors the taste and functional properties of bee-produced honey.
The result is a clean, sustainable, and highly controlled process that delivers the sweetness we love, while protecting the pollinators we need.
